- 3 lbs. russet potatoes (4 large), peeled and cut into 1 1/2-inch pieces
- 1/2 cup heavy cream
- 1/4 cup milk
- 4 tablespoons butter, cubed
- 1 cup (4 oz.) shredded SWISS Gruyère cheese, divided*

Beef and Vegetables
- 2 lbs. boneless beef short ribs trimmed and cut in 1-inch pieces
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons olive oil, divided
- 1 large onion, diced
- 1 cup diced carrot (approx. 3 med. carrots)
- 1 cup diced celery (about 3 stalks)
- 2 tablespoons AP flour
- 1 14.5 oz can fire roasted diced tomatoes, undrained
- 2 tablespoons low sodium soy sauce
- 1 tablespoon ketchup
- 1/2 teaspoon chili powder
- 1/4 tsp EACH dried oregano, dired parsly, paprika, salt, pepper
- 1/4 cup heavy whipping cream
